Once again these are all regular ingredients in my pantry, so I didn’t have to buy any special to make my pavs!

Note: The recipe called for using powdered erythritol but I didn’t have any, but Natvia is erythritol and stevia mixed together, so I just blasted that in my mixer until it was powdered (like icing sugar) and it worked fine for me. 

Making the Recipe

Making the recipe was quite simple and straight forward, there are a couple of really important steps outlined in the recipe so I was careful to make sure I followed them, especially wiping down the mixing bowl with white vinegar before starting and making sure it was dry.

My first ever pavlova was taking shape nicely!

Cooking Method

I chose to make small individual pavs this time, as they were just for me. I made 9 small pavs.

Cooking was simple, just stick to the notes in the recipe. Also, a great tip not in this recipe is once the pavs are cooked, open the door and use a wooden spoon to keep the door slightly ajar and leave the pavs to cool overnight. This lets any moisture out of the oven and will result in a crispy crust.

Very delicate, light and fluffy on the inside, but a very light crisp on the crust.

Piled high with vanilla cream and berries with a bit of mango puree.

“Keto Pavlova – not so sweet!”

“Even when you spoon the very thick and silky raw batter onto your tray you know this is going to work.  The mix is stiff and glossy and delicious.  You will note that I have not made this a very sweet mix at all.  I think it is far better than any pavlova I have eaten before due to the lack of that sickly sweet white sugar flavour.”

Is it? Is it REALLY that good?

OH YES IT IS. I’ve never actually been a fan of pavlova because I always found it sickly sweet, but this one is PERFECT. Its light and fluffy and delicate, there’s no sickly sweet after taste and its just yummy!

This is one recipe I will be making again and again and I hope my none keto family and friends enjoy it as well.
