Once again I have all the ingredients for this one already! PLUS you can substitute for lactose free cream cheese and butter (dairy free) if you want too! 

 

Making the Recipe – ♥ ♥ ♥ ♥ ♥

 

This recipe is nice and easy with the most important thing to do is to leave out the cream cheese long enough for it to soften so its easier to mix!

Melt the butter in the microwave it took mine about 40 seconds.

Add your almond flour & cinnamon and then press into your springform pan and bake at 175C for about 5 to 10 minutes (keep an eye on it).

My cream cheese could have done with another 10 minutes to soften 😀 … whip it up first until its soft then add all your other ingredients!

Mix it all together until its smooth and creamy and DELICIOUS!

Spread it into your springform pan nice and evenly.

175 C – is 350 F

Put it on the middle shelf and keep an eye on it! The recipe says 20 minutes and that was pretty accurate for my first attempt when I added the raspberries next time it took a little longer for some reason – I’d say an extra 5 minutes.

I made it for the 2nd time and this time I made my own raspberry coulis *Raspberries and Stevia in a pan until it all melts and comes together then a little Xantham Gum to thicken (Not too much!) Then I just swirled it through – it was a HIT!

Is it? Is it REALLY Fabulous?

YES… YES AND MORE YESES!

I have to thank my big sister for putting me on to this recipe as she made one for my brother-in-law’s birthday party a few weeks ago. Since then I’ve made two.  The original one from the recipe last weekend and then the one with the raspberry swirl this weekend for a party.

It is DELICIOUS and CREAMY and CREAM CHEESY and not too sickly sweet and its honestly SO EASY its fool proof! AND you can add whatever you want to it to jazz it up further, like my raspberry coulis or whatever else your heart desires! (As long as its low carb!)

This will be a regular at our family gatherings from now on!
