Keto Cream of Chicken Soup with Bacon

Another recipe where I already had all of the ingredients in my pantry or fridge. I love how THIS type of food is my norm now and that I don’t have to go and buy fancy ingredients to make a yummy meal.

*Note – I didn’t add the celery because I don’t like it, maybe leeks would be a nice substitute?

Making the Recipe – ♥ ♥ ♥

There were a LOT of steps in this recipe, not as quick and easy as I usually like.

Cooking Method – ♥ ♥ ♥

It definitely took time to prep and cook each individual element. Next time I might try it with a pre-cooked bbq chicken that I can strip.

Cooking my diced chicken pieces. I chose to use chicken thighs because they have more flavour than chicken breasts.

Frying off the mushrooms and garlic. These are not Shitake mushrooms as the recipe suggests, just regular field mushrooms.

Once all the elements are cooked, bacon, chicken, mushrooms, add your liquids. 

I found this soup to be VERY runny and thin, so I chose to simmer it with the lid off for about 30 minutes to try and thicken it up somewhat. It didn’t really thicken, but that time gave the flavours time to infuse more I think.

The Claim

“Warm up with some delicious cream of chicken soup with bacon and mushrooms. It’s sure to take the chill out on a cool fall or winter day and satisfy hunger.”

Is it? Is it REALLY delicious?

It was nice, but didn’t have as much flavour as I expected right at first. I did find however, that the longer it sat in my fridge (It made 4 portions) that the flavours became more pronounced over the coming days. I also like my soups to have a bit of a thicker consistency, this was more of a creamy broth.

Four nice sized serves for lunches for the week. It IS soup weather. But to be honest, not very filling. Lucky I had my Low Carb Almond Flour Bread to have with it.
