Once again Meal prep was easy, I already had everything I needed in my pantry! I love it when I don’t have to go and buy special ingredients for a recipe.

Making the Recipe♥ ♥ ♥ ♥ ♥

Meal prep was relatively simple for this recipe, melting the coconut oil and getting some warm water was as difficult as it got!

Melt the coconut oil in the microwave – careful not to heat it too much. I did mine for 30 seconds.

I’m coming to LOVE Pysillium Husk. It soaks up moisture and adds fibre, but it also gives a recipe body and definitely helps to make it more bread like in appearance and taste.

Add all the dry ingredients to the bowl and give them a mix.

Add the 4 eggs.

Add the melted oil and water.

Mix gently with a wooden spoon. Don’t over mix it.

Cooking Method ♥ ♥ ♥ ♥ ♥

SO EASY! Pop it into a bread tin or a silicone bread loaf thing and cook it for approx 20 minutes until its browned on top and cooked right through. Mine took an extra 5 minutes and I tested with a wooden skewer to make sure it was cooked.

Of COURSE my bread pan is pink!… I also have pink muffin trays as well 😀

The mixture came about halfway up the sides of the dish. I gave it one gentle tap on the bench to make sure it was all settled.

The Claim

Really? Is it REALLY just like the real thing?

Well I am going to say a RESOUNDING YES! Ok its not exactly like bread, whilst it IS light and fluffy it is NOT as light and fluffy as our traditional store brought breads.

Taste? PHENOMENAL! My sister even gave this a double thumbs up!

I was concerned with 4 eggs it might taste eggy… it did not.

I thought with the coconut oil it would taste coconutty – it did not.

It DID taste like a nice wholemeal style bread, it was moist but soft and bread fluffy.
